Leek and Potato Soup!

Today I made potato and leek soup from scratch. Whenever I go home my Mum makes me delicious butternut squash soup and so I thought I may as well having a go my self! I'll give you the recipe just in case you want to have a go at making it...it's yummy and is great for the cold winter days ahead! This recipe makes about 4 servings.

You will need:

2 Leeks
2 Large potatos
1 clove of garlic
2 Pints vegetable stock 
1/2 Pint of milk
A dollop of butter
A pinch of salt 
A pinch of pepper



To get started, chop up your two leeks, the easiest way to do this is to cut two slices vertically down it and then cut horizontal.


Heat the butter and grated garlic clove in a saucepan and then add the chopped leeks. Leave to soften on a warm temperature for about ten minutes before adding everything else apart from the milk.



Allow to boil for about 15 minutes and then remove from heat. Add the 1/2 pint of milk and blend into a smooth consistency, (or have it lumpy if you prefer). That's it! It's such a simple, tasty and healthy recipe, you really should give it a try! ^_^ 


I like to eat my soup with a sprinkle of grated chedder cheese on top and a side of bread and butter.
